I completely agree with your assessment of the last act. I couldn’t believe this bit of lazy writing and anti-climax would happen in a film that otherwise is a model for screen writing. It made me care almost as much for the dog as I did for Neville! I also blogged about this here: http://blog.mygeeklife.net/articles/2007/12/17/i-am-legend-excellent-premise-not-so-excellent-title; you and I seemed to have watched this in very similar ways.

I thought that he called the dog by the full name when she was bitten. All other time he called her Sam. I may be wrong
